if you're going to do anything more than a light brush w/ olive oil and salt/cracked pepper, you might as well just throw your money down the shitter and save yourself from ruing a good steak. Olive oil, lime juice, salt, pepper, crushed garlic in a ziplock with the steak left over night...just enough oil/lime juice to keep the steak covered. The garlic gets right in there, but its probably not a true marinade, but it comes no where close to ruining a steak... I wouldn't do it to a filet, but with a run of the mill NY Strip it does wonders. |

filet mignon is tender, but near impossible to get any flavor from. ribeyes and strips are the way to go for sure

Best restaurant steak I've had was at H3 Ranch steakhouse in Fort Worth, TX... Cattleman's which is right next door is ALMOST as good of a steak.
Texan's do know how to cook beef/bbq they're just too cocky about it...

i had the most interesting steak this past weekend. it was a rib-eye that was baked in the middle of a loaf of herb/wheat bread. the waiter brought it out
and then cut the loaf similar to the way you cut an avocado around the seed. out popped the most evenly cooked steak i have ever had. it was a tender pink
throughout the entire steak and it had the slightest hint of flavor from the herbs that were in the bread.
