gonna try and cook some wings tomorrow to see if they turn out ok for sunday
gonna have to bake them since no fryer, anyone had any luck or have a BAKE recipe that worked well?

breading > bake > fry is obviously your best option.
since you're skipping the frying portion, you're going to need to bake longer. whether you bread first or not is your choice. i cook mine naked, or no breading. i usually use a large tin pan similar to one you would cook a turkey in. basically i cook them uncovered for an hour at 350. i check on them about every 15 minutes to drain the grease and mix them up to make sure they're cooking thoroughly. as for sauce, it's hard to go wrong with BBQ wings. i'll add texas pete or franks to a honey BBQ sauce for the extra kick. you can add to taste. i'll add some liquid margarine to a hot sauce to give it some flavor and take some heat off if i have a weak tongued crowd. i never add the sauce until the last 15 minutes of baking. |

i searched wings and this is what comes up
i just happend to see Good Eats tonight and he steams them first?! does this make them crispier or somthin im prob gonna try these too http://www.foodnetwork.co...n-wings-recipe/index.html * 12 whole chicken wings * 3 ounces unsalted butter * 1 small clove garlic, minced * 1/4 cup hot sauce * 1/2 teaspoon kosher salt Directions Place a 6-quart saucepan with a steamer basket and 1-inch of water in the bottom, over high heat, cover and bring to a boil. Remove the tips of the wings and discard or save for making stock. Using kitchen shears, or a knife, separate the wings at the joint. Place the wings into the steamer basket, cover, reduce the heat to medium and steam for 10 minutes. Remove the wings from the basket and carefully pat dry. Lay the wings out on a cooling rack set in a half sheet pan lined with paper towels and place in the refrigerator for 1 hour. Preheat the oven to 425 degrees F. Replace the paper towels with parchment paper. Roast on the middle rack of the oven for 20 minutes. Turn the wings over and cook another 20 minutes or until meat is cooked through and the skin is golden brown. While the chicken is roasting, melt the butter in a small bowl along with the garlic. Pour this along with hot sauce and salt into a bowl large enough to hold all of the chicken and stir to combine. Remove the wings from the oven and transfer to the bowl and toss with the sauce. Serve warm.

i was watching good eats a few weeks ago and they actually steamed the wings first, then baked them at 425 for a little while to crisp the skin, then toss in desired sauce. i haven't tried it yet, but it makes sense...steaming keeps the wings moist, and baking quick at a high temp will crisp them up real good. maybe i'll try that for the SB on sunday... edit: lil pip apparently beat me to it...i should read responses first |
